Description
Ndolé is the national dish of Cameroon, a delicious stew made with bitter leaves, groundnuts, and your choice of meat or fish. This rich and flavorful dish is a staple at celebrations.
Ingredients
- 500g ndolé leaves (or spinach as substitute)
- 200g groundnut paste (peanut butter)
- 500g beef or fish
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 tablespoons palm oil
- 1 tablespoon crayfish powder
- Salt and pepper to taste
- Maggi cubes
- Water as needed
Instructions

Wash the ndolé leaves thoroughly and boil for 20 minutes to reduce bitterness. Drain and set aside.

Season and cook the meat or fish until tender. Set aside.

In a large pot, heat palm oil and sauté onions and garlic until fragrant.

Add tomatoes and cook until soft.

Mix groundnut paste with water to create a smooth paste.

Add the groundnut paste to the pot and stir well.

Add the cooked ndolé leaves, crayfish powder, and seasonings.

Add the cooked meat or fish and simmer for 30 minutes.

Adjust seasoning and serve hot with plantains, rice, or fufu.
Cooking Tips
- • If using spinach, blanch it first to reduce bitterness
- • The longer it simmers, the better the flavors blend
- • Add more groundnut paste for a richer taste
