Description
Cameroonian Jollof Rice is a flavorful one-pot rice dish cooked in a rich tomato sauce with vegetables and spices. A staple at parties and celebrations.
Ingredients
- 4 cups long grain rice
- 6 large tomatoes, blended
- 2 onions, chopped
- 1 cup tomato paste
- 1/2 cup vegetable oil
- 3 cloves garlic, minced
- 2 bay leaves
- 1 tablespoon curry powder
- 1 tablespoon thyme
- 2 Maggi cubes
- Salt and pepper to taste
- 4 cups chicken or beef stock
- 1 cup mixed vegetables (carrots, peas, green beans)
Instructions

Heat oil in a large pot and sauté onions and garlic.

Add tomato paste and fry for 5 minutes.

Add blended tomatoes and cook until oil rises to the top.

Add curry powder, thyme, bay leaves, Maggi cubes, salt, and pepper.

Add stock and bring to a boil.

Add washed rice and stir well.

Cover and cook on low heat for 30 minutes.

Add mixed vegetables in the last 10 minutes.

Fluff with a fork and serve hot.
Cooking Tips
- • Don't stir too much after adding rice
- • Let it steam properly for fluffy rice
- • Can add chicken or fish for a complete meal
